This dish above is one of my favorite Vietnamese dish. Its call 'Bun Bo Hue'. The dish is main up of vermicelli rice, tofu, beef, carrots and beansprouts. Garnish with cilantro. The soup is like a thin curry soup. It has a strong aroma and can be very spicy. Similar to Indian cuisine, this dish has a lot of flavor to it. Since this is a soup based dish, I love to eat it in the winter, when it is cold outside however because it is so good, I am willing to endure the extra heat and enjoy it in the summer too.
The ingredients are fairly simple and the dish is easy to make. However the soup does take a few hours for the flavor to simmer and come out. For anyone who wants to try a Vietnamese dish, I would recommend this over pho because it has a lot more flavor to pho & I love it better than pho. A lot of people are also getting familiar to eating pho so I would recommend this as something new to try out and learn more about the Vietnamese cuisine. :)
FUN FACT: Even though this dish generally contains beef, there is a way to make it a vegetarian dish. Because the next two days my parents have to avoid meat for some Buddhist cultural thing, they used a substitution for the beef. In the photo, the brown meat that looks like beef is actually more like tofu. It is not actual meat or beef. This way, they can still enjoy the dish while avoiding eating meat for their religion purposes. Best of both worlds! :)
